Blue Butterfly Pea Flower is commonly grown in Southeast Asia. It has the interesting property of changing colour in drinks when something acidic (lemon, lime, tonic water, etc) is added to it. In Thailand where is is known as Anchan Nom Dok, it is often used for creative layered drinks or in culinary applications (blue sticky rice, cakes, breads, etc).

This product is available in both flower and format:

  • The flower is a whole dried flower. 4-5 flowers will infuse into 1 litre of clear liquid (e.g. water, vodka, gin) in approximately 10-15 min. The whole dried flower can be strained from the liquid or left inside as a decoration.
  • The flower has a very mild, slightly earthy taste and will therefore not materially affect the flavour profile of other ingredients you are using.
