Blue Butterfly Pea Flower is commonly grown in Southeast Asia. It has the interesting property of changing colour in drinks when something acidic (lemon, lime, tonic water, etc) is added to it. In Thailand where is is known as Anchan Nom Dok, it is often used for creative layered drinks or in culinary applications (blue sticky rice, cakes, breads, etc).

The powder is milled from the whole flower. If infused in liquid, some flower fibre will remain if not strained.
